Scenario

Sushi Mori is a Japanese restaurant focused on providing a Japanese hospitality experience through our service and atmosphere. Our main products are traditional Japanese cuisine including sushi, seafood, noodles, and rice dishes. There are total of 22 employees varying in different positions: 5 sushi chefs, 6 kitchen staff, 2 dishwashers, 8 servers, and a manager. The restaurant is located on Yonge and Dundas intersection in Toronto, Ontario. The hour of operation is from 11:00 AM – 10:30 PM on weekdays, and !1:00 AM – 11:00 PM on weekends. Competitions are local Asian cuisine restaurants in the area of Yonge and Dundas.

Overview of Sushi Mori

Sushi Mori is offering sushi, seafood, noodles, and rice dishes. These products are traditional Japanese cuisine. The company contains 22 employees in different departments. 5 sushi chefs, 6 kitchen staff, 2 dishwashers, 8 servers, and a manager are working in this company. The restaurant remains open from 10:00 Am to 10:30 on weekdays. On weekends, the restaurant remains open from 10:00 Am to 11:00.  In the areas of Yonge and Dundas, local competitors have become threats from this company due to similar services or offerings for customers. Managing and maintaining employees in the company is a big challenge. Effective employee management can help to build a strong workforce and enable work efficiency.

Legal Environment

The employment law triggers the human resource process of the company in Japan. Employees in this organization are to be managed or maintained through Japan employment. For instance, under the employment rights, employees have to work eight hours a day and 40 hours a week along with several rules regarding overtime. Employers have to facilitate employees through the public employee health insurance scheme. If the company contains full-time and part-time employees, part-time employees must not be discriminated against.  The employee contract is in the limelight in this country, and it creates an impact on this company. For instance, the law fosters full-time employment. The company will have two full-time employees, probably lifetime employees. The best thing that the company can take from this law is employee management. The company can hire the employees, team train and develop them and build a strong work culture to get the advantage on other firms. Job Statement – Summary/Overview of the position: The restaurant manager in the company is responsible for revenue streams, profitability, and accomplishment of quality goals. The restaurant manager has to maintain the production or operational levels. He will manage the 21 employees working under him. Also, he also maintains customer service standards to build the image of the company.

Reporting relationship: The restaurant manager will have to report directly to the owner of the company. He will have to hold a meeting and use email to communicate with the owner and streamline the work progress. The reporting relation should be positive to sustain the effective work progress in the restaurant

Selection

The selection process for the job position starts with the employee screening. After posting jobs on online portals and evaluating resume, the companies will shortlist candidates. The employee (chef) selection is based on the interview, which is to be conducted by the restaurant manager.  The restaurant manager will evaluate the skills and experience to idealize the candidates.  5 to 7 chefs will be interviewed, and the best candidate will be hired by the restaurant manager. The restaurant management will contain a structured interview to save time and evaluate the candidate effectively (Hayes, Miller and Ninemeier). The resultant question will ask Experience verification questions to the candidate to know the ability, level of experience and knowledge. Four interview questions are as under

  1. What was your experience technique in the previous restaurant?
  2. How much work experience do you have?
  3. Do you think your work experience can help this organization improve the work process?
  4. What did you leave your previous employer?

Each question is to be asked to the candidate to derive possible required skills. Based on the experience, the company wants to hire or select the chef. These questions can help the restaurant manager to identify the skill level, ability to cook different food, the speed of cooking to meet the demands of customers in the restaurant

In the end, it is to conclude that the restaurant staff is to be managed through an effective human resource process. The restaurant manager will be playing the role of the human resource manager. Sushi Mori Restaurant is looking forward to implementing effective human resource strategies to manage employees and make them productive in a competitive business environment.
